Fudgy Mini-Egg Banana Muffins

Ingredients

  • 1 1/2 bananas

  • 2 eggs

  • 1 cup of coconut sugar *

  • 1/2 cup of olive oil

  • 2 cups of spelt flour *

  • 1/2 oat milk

  • 200g bag of mini-eggs

  • 1 1/2 tsp of baking powder *

  • 1/2 tsp of baking soda *

  • 1 tsp of salt *

  • 1 tsp of cinnamon *

Instructions

  1. Heat the oven to 350 Degrees. Line muffin tins.

  2. Sift the flour and combine all the remaining dry ingredients.*

  3. Mash the bananas in a new small bowl.

  4. Add the eggs, olive oil, milk to the mashed banana. Stir well.

  5. Add the wet ingredients into the dry, stir well.

  6. Add chopped mini-eggs (save a few to top each muffin)

  7. Bake for 20 minutes at 350 degrees.
