Chocolatey Mushroom Banana Squares

Two weeks in a row I've made these, so they are very worth while for the mind an sweet tooth

Recipe

  • 8 organic overripe bananas

  • 6 large free range eggs

  • 2 teaspoon vanilla extract

  • 1 teaspoons of cinnamon

  • 1 Teaspoon of all-spice

  • 2.5 cups packed spelt flour

  • 1 cup packed coconut flour

  • 3/4 cup high-quality cocoa powder (see recipe notes below)

  • 1 and 1/2 teaspoon baking soda

  • 1 and 1/2 teaspoon baking powder

  • 1 teaspoon salt

  • 1/2 cup stevia or monk fruit chocolate chips

  • 2 tablespoons of Cocoa mushroom powder to top & 2 Tbsp in batter

Instruction

  • Preheat oven to 350 degrees

  • Line a large pan with parchment paper

  • Add bananas, eggs, all spice, cinnamon and vanilla to a blender and blend until smooth.

  • In a large bowl, stir together spelt flour, coconut flour, cocoa powder, baking soda, baking powder and culinary salt.

  • Gently fold in wet with dry mix and stir until well combined. Add in chocolate chips and mushroom powder

  • Spread batter evenly into lined pan and sprinkle remaining chocolate chips on top.

  • Bake for 30 minutes or until toothpick comes out clean.

  • When done, lift out bread in parchment paper to a wire rack to cool for 20 minutes before cutting into squares.
