Stir in lemon zest. Set aside.In a separate large mixing bowl microwave the butter for 45- 1.5 minutesGradually add the sugar and monk-fruit to the melted butter and whisk.Add eggs as well, one at a time. Whisk well. Add the 1/2 cup of lemon juice.Add milk to the flour mixture and gradually add in the liquid mixture to flour mixture- stir well. Place mixture into loaf pan. Tap it on the counter to remove air bubbles.Bake in preheated oven for 60 minutes until golden. Transfer pan to a rack where it can cool down for 10 minutes then remove from loaf pan to cool down completely on a cooling rack.
