Lemon Loaf

Ingredients

  • 2 cups all-purpose sifted flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 tablespoon lemon zest

  • 1/2 cup unsalted butter

  • 1/2 cup of granulated sugar

  • 1/2 cup of erythritol/monk-fruit

  • 3 eggs

  • 1/2 cup lemon juice

  • 1/2 cup of full fat milk

Instructions

  • Preheat the oven to 350℉ (175°C) .

  • Grease a 9 x 5 inch loaf pan.

  • Altogether sift the flour, baking powder, soda, and salt. Stir in lemon zest. Set aside.

  • In a separate large mixing bowl microwave the butter for 45- 1.5 minutes

  • Gradually add the sugar and monk-fruit to the melted butter and whisk.

  • Add eggs as well, one at a time. Whisk well.

  • Add the 1/2 cup of lemon juice.

  • Add milk to the flour mixture and gradually add in the liquid mixture to flour mixture- stir well.

  • Place mixture into loaf pan. Tap it on the counter to remove air bubbles.

  • Bake in preheated oven for 60 minutes until golden.

  • Transfer pan to a rack where it can cool down for 10 minutes then remove from loaf pan to cool down completely on a cooling rack.
