Lemon Loaf
citrusy sweet
Ingredients
2 cups all-purpose sifted flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon lemon zest
1/2 cup unsalted butter
1/2 cup of granulated sugar
1/2 cup of erythritol/monk-fruit
3 eggs
1/2 cup lemon juice
1/2 cup of full fat milk
Instructions
Preheat the oven to 350℉ (175°C) .
Grease a 9 x 5 inch loaf pan.
Altogether sift the flour, baking powder, soda, and salt. Stir in lemon zest. Set aside.
In a separate large mixing bowl microwave the butter for 45- 1.5 minutes
Gradually add the sugar and monk-fruit to the melted butter and whisk.
Add eggs as well, one at a time. Whisk well.
Add the 1/2 cup of lemon juice.
Add milk to the flour mixture and gradually add in the liquid mixture to flour mixture- stir well.
Place mixture into loaf pan. Tap it on the counter to remove air bubbles.
Bake in preheated oven for 60 minutes until golden.
Transfer pan to a rack where it can cool down for 10 minutes then remove from loaf pan to cool down completely on a cooling rack.
